The table.
The momo.

Momos are made with patience, with family, on rainy days. There is something in the folding of dough that teaches the same discipline as waiting for the right entry.

Chia Seed Pudding

Morning Ritual · The Golden Ratio

Prep: 5 min Chill: 2+ hrs, or overnight Keeps: 4–5 days

The 1:4 Ratio

  • 1/4 cup chia seeds
  • 1 cup milk (almond, oat, coconut, or dairy)
  • 1 tsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 pinch cinnamon

Steps

  1. Mix — combine everything in a sealable jar.
  2. Stir — whisk or shake for 30 seconds to distribute the seeds evenly.
  3. Reset (5 min later) — stir again to break up clumps at the bottom.
  4. Chill — seal and refrigerate overnight. Set by morning.

Toppings — Choose One

Optional Mix-Ins

Beet powder — 1/2 to 1 tsp per serving, whisked into the milk before adding chia. Color, nitrates, earthy sweetness. More than 1 tsp per cup starts to taste like dirt.

Rolled oats — 2 to 3 tbsp added with the chia, plus 2 tbsp extra milk to keep it pourable. Adds fiber and a heartier bite.
