Chia Seed Pudding
Morning Ritual · The Golden Ratio
The 1:4 Ratio
- 1/4 cup chia seeds
- 1 cup milk (almond, oat, coconut, or dairy)
- 1 tsp maple syrup or honey
- 1/2 tsp vanilla extract
- 1 pinch cinnamon
Steps
- Mix — add all ingredients into a sealable jar or airtight container.
- Stir — whisk or shake vigorously for 30 seconds to distribute the seeds evenly.
- Reset (5 min later) — give it one final, thorough stir to break up clumps at the bottom.
- Chill — seal and refrigerate overnight. Perfectly set by morning.
Morning Toppings — Choose One
- Almond crunch — 1 tbsp chopped almonds + fresh berries
- Sunflower seed mist — 1 tbsp sunflower seeds + extra drizzle of honey
- PB & banana — 1 tbsp crushed peanuts + 1/2 sliced banana
Optional Mix-Ins
Beet powder — 1/2 to 1 tsp per serving. Whisk into the milk before adding the chia so it doesn't clump. Adds color, nitrates, and earthy sweetness. More than 1 tsp per cup tends to taste like dirt.
Rolled oats — 2 to 3 tbsp added alongside the chia, plus 2 tbsp extra milk to keep it pourable. Adds fiber and a heartier, oatmeal-like bite — closer to overnight-oats territory.
Tip: Multiply the batch by 4 on Sunday night to have breakfast completely prepped for the entire workweek.
